Phil Romano’s second concept at West Dallas’ Trinity Groves is slated to open July 1.
Potato Flats, the build-your-own potato restaurant, will open at 11 a.m. and feature potatoes, either regular or sweet, baked or fried, with a variety of toppings, including vegetables, steak, ground beef, chicken, turkey and seafood.
It will serve daily specials including its Thanksgiving potato, which will feature sliced turkey, gravy, roasted carrots, peas, corn and cranberry relish.
The restaurant, like the others at the Trinity Groves restaurant incubator, occupies 2,500 square feet of space and is located on the north side of Casa Rubia.
Romano previously told the Dallas Business Journal that Potato Flats was a concept he plans to expand to food courts, airports and schools.
The restaurant, which he said is similar to Chipotle in its serving style, joins Romano’s first Trinity Groves concept, Hofmann’s Hots, which specializes in hot dogs.
